Cinnamon and Brown Sugar Crinkle Cookies

Rustic golden cinnamon and brown sugar crinkle cookies with naturally cracked tops. pinit

Dark brown sugar gives these cookies a rounded, caramel-like flavour, with cinnamon and mixed spice adding warmth. Their centres stay chewy beneath a crisp, crackled surface, finished with a cinnamon-sugar coating.

Chilling the dough makes it easier to shape and helps control how far the cookies spread in the oven. Leave generous gaps on the trays and let the baked cookies settle before moving them; patience at this stage is useful, even if the kitchen smells as though it is actively arguing against it.

Instructions

  1. Mix the flour, baking powder, bicarbonate of soda, mixed spice, 1 tsp cinnamon and salt.
  2. In a second bowl, beat the butter and brown sugar for 2 to 3 minutes until fluffy. Beat in the egg and vanilla, then fold in the dry mixture just until combined.
  3. Cover and chill for 1 to 2 hours, until firm enough to shape. Heat the oven to 180°C, 160°C fan, and line two baking trays.
  4. Mix the demerara sugar with the remaining ½ tsp cinnamon. Divide the dough into 14 equal portions, roll into balls and coat with the cinnamon sugar. Space generously on the trays.
  5. Bake for about 15 minutes, until the edges are set and the tops have cracked. Leave on the trays for 5 minutes, then move to a wire rack to cool.
