Paneer keeps its shape as it cooks, making it well suited to a sauce that coats each cube without swallowing it whole. Here, golden edges, sweet peas and softened onion meet a tomato sauce scented with ginger, garlic and warm spices, with a little cream to soften the tomato’s sharpness.

Roasting the paneer and onion gives them time to colour while the sauce simmers on the hob. Once everything comes together, the oven finishes the job; serve with rice or warm naan, particularly if leaving good sauce in the bowl seems a rather poor use of dinner.

Instructions

  1. Heat the oven to 200°C, 180°C fan. Toss the paneer and sliced onion with the oil in a baking dish and roast for 15 minutes, turning halfway.
  2. Meanwhile, put the passata, garlic, ginger, cumin, coriander and paprika into a small saucepan. Simmer gently for 10 to 15 minutes, stirring regularly. Stir in the cream and garam masala.
  3. Bring the whole batch of finished sauce to 250 g, gently reducing it or adding a little water to reach the required weight. Add all the sauce to the paneer with the frozen peas and the 100 ml hot water.
  4. Return to the oven for 10 to 15 minutes, until the peas are cooked and the sauce is bubbling. Season to taste and serve.
