This recipe was originally written for the F1 weekend in Miami so what could be a more appropriate option to begin the weekend with than fried chicken? Step that up a notch with a nod to one of the drivers via Thai flavours. Alexander Albon Ansusinha born 23 March 1996) is a Thai-British Formula One driver for Williams Racing. Albon previously raced in Formula One for Scuderia Toro Rosso and Red Bull Racing and in DTM for AF Corse.
Albon Chicken Bites
Ingredients
Instructions
-
Heat a heavy skillet or frying pan over a medium temperature and add the oil.
-
Slice the chicken into 2" pieces and set aside.
-
In a large bowl combine the flour, garlic powder, egg, milk, coconut, salt and pepper and bind until well incorporated. This should be a thick paste at this stage.
-
Dip each chicken piece into the batter one at a time ensuring full coverage onto the chicken and place into the frying pan, being careful not to overcrowd the pan so each piece fries all around. Fry until a crisp golden brown appearance, which in turn shall ensure the chicken is cooked thoroughly but still juicy and moist.
-
Remove from the oil as each one cooks and drain onto a sheet of kitchen roll in a separate bowl.
-
Transfer the Albons onto another plate and drizzle with sweet red chili sauce and finally topped with the spring onions.
-
Grab a cold glass of wine and enjoy watching the race.
