Yoghurt gives these homemade naans a tender texture and a gentle tang, while nigella seeds add their distinctive savoury flavour. A hot, dry frying pan creates the golden blisters, and a light brushing of butter finishes the breads while they are still warm.
Give the dough time to rise, then roll each portion into a loose oval; matching shapes are entirely optional. Keep the cooked naans loosely covered while you finish the batch, ready for scooping up a curry or collecting the last of a good sauce.
Soft Yoghurt Naans with Nigella Seeds
Description
Soft pan-cooked naans enriched with natural yoghurt, dotted with nigella seeds and finished with a light brushing of butter.
Ingredients
Instructions
-
Combine the warm water, yeast and half the sugar. Leave for 10 to 15 minutes, until foamy.
-
Mix the 300 g flour, remaining sugar, salt and baking powder. Add the yoghurt, nigella seeds, 25 g melted butter and yeast mixture. Bring together into a soft dough.
-
Knead for 10 minutes. Lightly butter a bowl using a little of the finishing allowance. Cover the dough in the bowl and leave for approximately 1 hour, or until doubled.
-
Divide into six equal pieces. Dust lightly with the measured extra flour and roll into uneven ovals about 21 cm long.
-
Cook individually in a hot dry frying pan for roughly 3 minutes on the first side and 3 to 4 minutes on the second, until blistered and cooked through. Reduce the heat if browning too quickly.
-
Brush with the remaining finishing butter. Cover loosely to keep soft and serve warm.
