Smoky Bean Burgers with Avocado and Lime Mayonnaise

A homemade smoky bean burger cut in half, with avocado, pickled red onion and lime mayonnaise in a sesame bun. pinit

Black beans, mushrooms and oats make a substantial homemade burger, with smoked paprika adding warmth and a little depth. Creamy avocado, sharp pickled onion and smoky lime mayonnaise give each mouthful a balance of richness, freshness and crunch from the toasted bun.

The beans need to be thoroughly tender, and chilling the shaped patties helps them hold together in the pan. Turn them gently and give the outside time to brown: these burgers appreciate a little care, particularly when making the journey from frying pan to bun.

Instructions

  1. Drain the soaked beans and cover with fresh water. Bring to a full boil and boil briskly for 30 minutes, then simmer for 30 to 60 minutes more, until completely soft. Drain well and measure 220 g.
  2. Combine the vinegar, maple syrup and salt. Add the red onion and set aside while making the burgers.
  3. Cook the mushrooms in 1 tsp oil for 8 to 10 minutes, until their liquid has evaporated. Mash the beans, then mix with the mushrooms, oats and smoked paprika. Shape into two firm patties and chill for 20 minutes.
  4. Mix the chipotle powder and tomato purée with a few drops of water to make 1 tsp paste. Stir into the mayonnaise with the lime zest and juice.
  5. Heat the remaining 1 tsp oil in a frying pan. Cook the patties for 5 to 6 minutes on each side, until browned and hot throughout. Turn carefully.
  6. Toast the split buns. Spread with the mayonnaise, add avocado and a burger, then top with drained pickled onion and the bun lids.
